His style reflects a deep understanding of Nikkei cuisine, refined through years of global experience.

Matías Fasce

Sushi chef at Fortuna, Matías specializes in Nikkei and Asian-style gastronomy.

With years of experience, he’s known for crafting vibrant, detail-oriented menus that merge Japanese precision with contemporary creativity.

Candela Lasalle

Executive Chef at La Universal, Candela pairs formal culinary education with a solid career in fine dining.

Her cuisine is defined by elegance, depth of flavor, and a commitment to seasonal, expressive cooking.

Ivo Sosti

Trained at La Universal and currently Head Chef at Fortuna, Ivo brings deep expertise in Japanese cuisine and a refined mastery of open-fire cooking.

His dishes balance precision, bold flavors, and an unmistakable Mediterranean soul.

Matías Conti

Currently Head Chef at Mitj & Mitj, Matías was trained at La Universal and stands out for his creativity and versatility.
